Kiwi Coconut Smoothie!

Summer time! Time for summer fruit smoothies!

Ingredients:

Whipped Coconut Topping

  • 1 can coconut milk
  • 1 tbsp honey
  • 1/2 tsp vanilla extract

Smoothie

  • 4 small kiwi
  • reserved coconut milk from whipped topping
  • 1 frozen sliced banana
  • 1 handful spinach
  • 1/2 cup vanilla yogurt
  • honey

Topping Instructions:

  1. Skim milk off top of can and set aside for smoothie
  2. In bowl, combine ingredients and blend with hand mixer
  3. Place in freezer to firm up while doing smoothie

Smoothie Instructions:

  1. cut kiwi in half and scoop out fruit into kitchen robot
  2. add remaining ingredients
  3. add honey if not sweet enough
  4. top with whipped topping

Note: When it says use a hand mixer, use one. These smoothies will come out very tart so use the honey! I didn’t have spinach and I knew lettuce wasn’t the same so I did without, which probably screwed with the flavor a bit. I didn’t have a can of coconut milk either so I used So Delicious Coconut milk from the carton. Makes skimming difficult. Use the can. It makes a difference.
