OK, so the way this was supposed to go down was not as healthy as I’d have liked, but you do what you can with what’s available as a college student.
1/2 zucchini sliced
1 can of pizza crust (preferably whole wheat but even a can of crescent rolls will do)
1 container of Alouette light garlic herb cheese
1/2 purple onion (probably not even that) sliced
I got this recipe from my friend’s mom. She made it one day and I fell in love 🙂
Preheat oven to about 350° (depending on what your brand of pizza dough says) On a pre-greased (Pam works) cookie sheet or baking pan, roll out pizza dough. Take 1/2 of the Alouette cheese and spread it all over the dough. Then fold dough lengthwise (hot dog style for those of you who remember what that is). Spread top of dough with other half of cheese. To make this healthier, don’t use so much cheese. You can use a 1/2 container for the whole pizza and it will still be delicious. Layer onion slices and zucchini slices on top of cheese spread. Pop into oven for about 12 minutes (more or less depending on what your can of pizza dough says!). Remove when done, let cool and serve. Yummy!
Roughly 350 calories for 1/3 a pizza.
